One of life's little ironies...
My butcher called about two hours ago. Asked me to come pick up the quarter
that I asked him to not cut up so that I could use for bottling.
So that's what I'm doing right now (well now I'm taking a break, but you
know what I mean!!)...cutting up a 105lb moose quarter and bottling the
meat.
Any suggestions on recipes or additions? Normally I just sterilize the
bottles, put a few rashers in the bottom, add the meat in layers with salt
and pepper on each layer. I also add a bay leaf. Do you guys add other
spices or ingredients or just go with the basics?

I know of people eating it up to four years old.
Again, it all depends on how well it was processed.
