one week ... any bottles you have older than that - I can dispose of them
for you LOL.

Seriously, I know people who have kept them longer than a year, and it was
still good. It is supposed to be the preserved the same as canned food - so
I would presume its a good for quite a while.

If the bottles have been sterilized and properly sealed, it should be good
for years.

If processed properly, the meat should be safe to eat for years. I have
eated two year old bottled moose meat with no problem. It just never seems
to last that long at my house! Those were a couple that got lost.

I know of people eating it up to four years old.

Again, it all depends on how well it was processed.

One of life's little ironies...

My butcher called about two hours ago. Asked me to come pick up the quarter
that I asked him to not cut up so that I could use for bottling.

So that's what I'm doing right now (well now I'm taking a break, but you
know what I mean!!)...cutting up a 105lb moose quarter and bottling the
meat.

Any suggestions on recipes or additions? Normally I just sterilize the
bottles, put a few rashers in the bottom, add the meat in layers with salt
and pepper on each layer. I also add a bay leaf. Do you guys add other
spices or ingredients or just go with the basics?

I add garlic and onions to each bottle, just a little of each per
bottle. You don't want to overpower the moose meat. Btw, thanks for the
tip re the bay leaf. Never thought of it before. I'll have to give it a
try next year.

Garlic...Hmm might try that.

I have had bad results with onions though. I find they create an off taste.
Maybe I put too many in. I like to reheat the bottled meat with fried
onions though.

Same applies to bay leaf though, just a little (usually a single leaf) per
bottle

out perfectly. Dash worcestershire sauce is great too.

Whew!!!!

Finally finished cutting up that quarter. It took 52 - 500mL bottle plus I
kept aside 4 medium sized ziploc bags of meat for stew.

Now I just have to boil all those bottles.

I've heard various times 2hrs 2.5 hrs, 3hrs. What is the prevailing
attitude on how long to boil them for?

Whew!!!!
Finally finished cutting up that quarter. It took 52 - 500mL bottle plus I
kept aside 4 medium sized ziploc bags of meat for stew.
Now I just have to boil all those bottles.
I've heard various times 2hrs 2.5 hrs, 3hrs. What is the prevailing
attitude on how long to boil them for?

Maybe you are just using too much onion. I always use onion and it turns
out perfectly. Dash worcestershire sauce is great too.

Garlic...Hmm might try that.
I have had bad results with onions though. I find they create an off
taste.

Maybe I put too many in. I like to reheat the bottled meat with fried
onions though.
Same applies to bay leaf though, just a little (usually a single leaf)

I add garlic and onions to each bottle, just a little of each per
bottle. You don't want to overpower the moose meat. Btw, thanks for the
tip re the bay leaf. Never thought of it before. I'll have to give it a
try next year.
