QUESTION:...can you get a rare,medium rare, or even medium burger in North
Carolina these days?...I've heard both answers given. I know that here in
Massachusetts most burger/steak/seafood restaurants have disclaimers on their
menus that allows them to serve the food as the customer wants...I remember the
good ol' days on Hillsborough Street when I would go and get Char-Grill RARE
burgers...now they are hockey pucks to this carnivore...I'd rather croak with a
greasy E Coli burger hanging from my lips than live through a lifetime of DRY,
overcooked burgers! "Pa"

I was told last week that Fuddrucker's will cook your burger to order.
Supposedly the prohibition on rare burgers is lifted for those
establishments who have freshly ground beef available. DISCLAIMER:
have'nt been by to check this out for myself. Like you, I don't care
for overcooked burgers.

I picked up Char-Grill for a crowd this week at the Strickland location and
all of our burgers were medium at best, pink in the middle - and it wasn't
even crowded.

I hate to divulge our secret, but O'Charlies can serve a rare burger. They
claim they can do it because they use ground chuck and not ground round. I
have ordered medium rare at 3 different O'Charlies and it was great every
time, especially the mushroom Swiss. And the capper.....2 kids under 10 eat
free anytime with each adult! Just don't order drinks and you can not beat
this place.

Not intentional on their part I'm guessing...and of course if you asked for
them that way you'd likely get the "it's against the law" response...all I know
is that a "well done" anything meatwise is an oxymoron! "Pa"

serve steak can customize burgers. I say this is a waste of a post because
I've "heard" that. I don't know for sure that it is true. But, I do think
that I've seen places that do customize burgers, with a disclaimer on the
menu that there is risk associated with undercooked meat and you're on your
own if your guts explode. I don't know that I've seen that recently,
though.

I've never seen (or perhaps noticed) any such disclaimers at any place
we have eaten, but it is not a risk associated with meat that is
"undercooked" - it has to be contaminated as well as not properly
prepared and well cooked meat that is contaminat4ed on the way to your
plate or table is the risk to be avoided!

NC law states that ground beef must be cooked to an internal temperature of
155 degrees, which in effect is medium rare to medium. USDA would have you
cook it to at least 160 to kill any ecoli bacteria that may be present.

Ted's at Renaissance Plaza, across from Southpoint, a) grinds their own beef
and bison for burgers and b) will serve it as rare as you wish. I ate there
yesterday and can confirm. ER
