bring thee into the land whither thou goest to possess it, and hath cast out
many nations before thee, the Hittites, and the Girgashites, and the
Amorites,
and the Canaanites, and the Perizzites, and the Hivites, and the Jebusites,
seven nations greater and mightier than thou...". (Taken from the King James
Version, obviously your favorite translation of Holy Writ.)
Amalek, or rather the Amalekites, are not even mentioned.

No. That is totally irrelevant. The instructions of God for the Israelites
to destroy those seven nations were not included in, nor were they a part
of the Mosaic Law.
Furthermore, Christians are not under the Mosaic Law.
"For sin shall not have dominion over you: for ye are not under the law,
but under grace." (Romans 6:14)
"Know ye not, brethren, (for I speak to them that know the law,) how
that the law hath dominion over a man as long as he liveth? For the
woman which hath an husband is bound by the law to her husband so
